Sardinia, an arid island in the Italian Mediterranean, is home to more sheep than people. The result is many amazing pecorinos (Italian sheep’s milk cheeses) - both aged and young. Mitica Sardo is produced by a small creamery that has been in operation since 1962, and is produced in the same style as Fiore Sardo. Lightly smoked as it ages, this cheese is dense and crumbly with a robust meat-y flavor with hints of salted nuts and wild herbs. Pair with a Chianti.
