Using a traditional Gouda recipe, curds are washed before being formed into rounds - the result is a sweeter, nuttier cheese with relatively little lactic tang. Aged for 16 - 24 months, they are only able to produce a few 20 pound wheels. You can taste cream, toasted hazelnuts and butterscotch with crunchy salt formations scattered throughout. A rare gem from this California creamery!
