Using fresh, pasteurized cow’s milk from nearby dairies, wheels are lightly brined and only flipped twice before resting on racks for about 18 hours. The result is a cheese that is reminiscent of a cheese curd in texture with a lactic, tangy flavor. This would make an awesome cheese danish!
