Similar to small sheep’s milk cheeses made in the Loire or Spain, the vegetable ash on the exterior helps balance the pH levels of the cheese, producing the perfect rind. When young, the cheese is reminiscent of an artisan feta - creamy, bright and citrusy. But as it ages, the flavors become more intense and earthy, with a distinct cream line forming directly under the rind. Palate coating, this cheese would pair wonderfully with apricots and a glass of rosé.
