Vella’s customers were seeking a firm cheese that would survive warm California summers in low-tech “iceboxes,” which were common during the 1920’s - 1940’s. Originally only available from May - October when milk was best, production was at its peak and iceboxes were used the most frequently, Vella stopped production of this cheese at the end of World War II. It was revived in 1999 after the recipe was discovered buried in a folder in the cheese production facility’s office. It has been widely popular ever since. Firm, smooth and creamy in texture, this cheese is coated with a distinct blend of cocoa, vegetable oil and black pepper. Milky, nutty and herbaceous in flavor with subtle spices carried over from the rind, this blast from the past is the definition of a classic Jack cheese. Perfect for melting in grilled cheese sandwiches or in a quesadilla.
