Each wheel of Paso Vino is soaked in a full-bodied local Syrah before lightly pressed and left to age. The result is a raisin-purple exterior in a firm, dense interior. With a fruity aroma, the cheese itself is fairly mild - with hints of toasted nuts, hay and fresh milk. Pair with - what else - Syrah!
