This raw milk, medium sharp cheddar is born as a 40-lb block, but at the 6-month mark is broken down into one pound chunks and dipped in brown wax. The wax is a way for the cheese to retain the same flavor and moisture over an extended period of time. A simple cheddar with flavors of buttered toast and cream.
