Aged for a minimum of 12 months in limestone caves, this cheese is a fruity, dense blue with hints of vanilla and a texture full of butter and crystals. Other flavor notes include shiitake mushrooms, beets and vanilla. The earthy quality of this blue lends itself beautifully to bold reds, such as Zinfandels or Cabernets.
